Here's what I believe: I believe that nature designed human metabolism to be responsive to a wide range of diet types.
Why? Our digestive tracts are longer than herbivores and shorter than carnivores. Like carnivores, we have canine teeth for tearing meat, and, like herbivores, we have molars for grinding vegetables.
What humans have not developed over evolutionary time is the physiology that we would need to optimally metabolize ultra-processed foods that contain high levels of specific partitioned ingredients.
